I am on a serious health kick and wanted something light with protein. I used a Sushi Grade Tilapia that I picked up from Atlanta's First Coast Gourmet. Actually I have been loading up on their products because they come cryovacked frozen and are easy to store. I can hop over to Bangkok for a few weeks and not worry about my high quality meats in the freezer. The spring/summer season is also ahead so cutting some carbs (Rice... I will miss you!) is in order as well.

So here it is...

I put (2) frozen Tilapia fillets in warm water to thaw. While the Tilapia was thawing I cut 1/2 Red Pepper and 1/2 Orange Pepper. I picked up some fresh pineapple at the store for a garnish but of course use fresh mango if available. The Tilapia is sushi grade but I like to have it fully cooked which only took about 5 minutes. After the first side is cooked, top Tilapia with CurrySimple's Mango Sauce. Start grilling the peppers and set up the pineapple garnish on the plate. When the Tilapia is fully cooked place on the plate and top with the orange/red peppers.

The end result was a fantastic and healthy lunch (of course would be great for dinner).
