This recipe is one of my personal favorites. The red curry sauce has a medium spice and is easily transformed into a panang curry with just a little peanut butter. I would recommend using an all-natural peanut butter. You can easily spice this up with crushed red pepper flakes without changing the taste of the recipe. It is simple with just the peppers but of course it tastes great with about any vegetables you throw in. Enjoy!

Ingredients:

24 oz peeled shrimp
1 chopped red pepper
1 chopped green pepper
2 tablespoons smooth or chunky peanut butter
15 fresh basil leaves
1 CurrySimple Gourmet Red Curry Sauce

Preparation:

Heat a stir-fry pan or wok to high heat
Add 2 oz of cooking oil to pan
Stir-fry shrimp for 2-3 minutes or until about 70% cooked
Add chopped red & green peppers - cook for 2 minutes
Stir 2 tablespoons of smooth or chunky peanut butter - The peanut butter with infuse into the sauce
Add 15 basil leaves
Serve with plenty of Thai jasmine or healthy brown rice
